So, Why Fruit Cake?

Fruitcake contains a good amount of rum (an alcoholic substance that is extracted from sugarcane juice or molasses, and undergoes fermentation) . An amount as little as 1.5 ounces of rum is enough to induce calmness and a good night sleep.

The mix of the fruits in a fruitcake generally contains great qualities of antioxidants, especially polyphenols. The health benefits derived from this reduce the risk of certain diseases such as cancer, obesity, diabetes mellitus and others by lowering the incident of damage that may lead to these diseases.
- Sifted All-Purpose Flour
- Seedless Raisins
- Diced Glace Citron
- Butter or Margarine
- Strawberry Preserves
- Baking Soda
- Golden Raisins
- Diced Mixed Glace Fruit
- Glace Cherries
- Eggs, Separated and in room temperature
- Cooked Bulgur
Sift together flour, baking soda, cinnamon, allspice, mace and nutmeg. Add fruits and mix enough to separate pieces of fruit.
Cream butter and sugar until light and fluffy. Add egg yolks and beat until thick and creamy. Stir in cider, preserves and bulgur.
Add flour-fruit mixture and blend thoroughly. In separate bowl, beat egg whites until stiff enough to hold peaks.

Fold into batter. Fill greased loaf pan or mold about three-fourths full (coffee or shortening cans will do). Cover tightly.
Steam for 3 hours. Cool for 15 minutes, remove from pans, and brush with Brown Sugar Glaze.
Any large covered utensil with tightly fitting cover can be used as a steamer. Place rack in bottom and keep water level at about l-1/2 inches. Keep water boiling gently.
